Thursday: Roasted Beef Tenderloin with green beans and macaroni and cheese
I got the beef tenderloin recipe off of Pioneer Woman's blog. Beef tenderloin is expensive, but you can tell the butcher how many you are feeding, in my case just two, and he will cut you a smaller portion. This can really save you some money!

Monday: Blackened Shrimp w/ Dirty Rice
Tuesday: Bowl of Progressive Chicken Noodle Soup (Travis was on call)
Wednesday: Poppy Seed Chicken w/ Asparagus
This recipe can be found in the May/June issue of "Cooking with Paula Deen". This was a casserole recipe made with chunk chicken, but Travis does not like how everything is mixed together in a casserole, so I cooked the rice for about 15 minutes in the oven using a mixture of chicken stock and water. Then I placed chicken breasts on top of the rice, cooked about 15 more minutes, and pulled it out to pour the sauce over the top. I cut the sauce recipe in half. I allowed the dish to cook about 10 minutes, and then pulled it out one last time to place the crackers on top. I can send you the original recipe on request.

Friday: Paprika Chicken
Saturday: Ate Out

As you can see from this menu, I do not cook many vegetables. Travis does not like vegetables...He's a meat and rice person.
